Nie je to postaven\u00e9 na hlavu? V dne\u0161nej dobe, ke\u010f dobr\u00e9ho pracovn\u00edka n\u00e1jdete \u0165a\u017eko a dlhodobo udr\u017e\u00edte e\u0161te \u0165a\u017e\u0161ie? V\u010dera sme sa s u\u010dite\u013emi zhodli, \u017ee m\u00e1me prive\u013ea hotelov\u00fdch \u0161k\u00f4l. Mysl\u00edm \u017ee nie\u010do cez 25. M\u00f4\u017ete si poveda\u0165, \u017ee je u n\u00e1s ve\u013ea re\u0161taur\u00e1ci\u00ed, kde si n\u00e1jdu svoje uplatnenie, ale ke\u010f sa pozriete, kto v t\u00fdch re\u0161taur\u00e1ci\u00e1ch re\u00e1lne po tom raj\u00f3ne beh\u00e1, tak sa \u010dudujem, kde tie stovky vyu\u010den\u00fdch dec\u00e1k s\u00fa. Netreba viac komentu, ka\u017ed\u00e9mu je to jasn\u00e9. Drviv\u00e1 v\u00e4\u010d\u0161ina gastrokonceptov ak\u00e9hoko\u013evek druhu je na takej slabej \u00farovni, \u017ee vlastne vyu\u010den\u00fdch \u010da\u0161n\u00edkov ani nepotrebuje \/mo\u017eno kuch\u00e1rov ako tak\/, \u017ee im sta\u010d\u00ed hocikto, kto je ochotn\u00fd pr\u00eds\u0165 do pr\u00e1ce. Tak \u017ee si k\u013eudne odpo\u010d\u00edtajte 80% z celkov\u00e9ho \u00a0mno\u017estva gastrozariaden\u00ed. Hotelov\u00e9 \u0161koly sa teda oplat\u00ed prev\u00e1dzkova\u0165 pre zvy\u0161n\u00fdch 20%. Tak \u017ee si mysl\u00edm, \u017ee n\u00e1m sta\u010d\u00ed 5 \/slovom P\u00c4\u0164\/ odborn\u00fdch hotelov\u00fdch \u0161k\u00f4l pre cel\u00e9 Slovenko.<br \/>\n<strong>Kde je chyba?<\/strong><br \/>\nVe\u013ea z n\u00e1s hovor\u00ed, \u017ee nem\u00e1me naozajstn\u00fdch gastrou\u010dite\u013eov. \u017de nesleduj\u00fa v\u00fdvoj, \u017ee nemotivuj\u00fa. Neh\u00e1d\u017eme v\u0161ak v\u0161etko na nich. Je to ve\u013emi individu\u00e1lne a ja nem\u00e1m ten pocit, aspo\u0148 z t\u00fdch, s ktor\u00fdmi som sa stretol, \u017ee by sa nechceli sami viac vzdel\u00e1va\u0165, aj ke\u010f si uvedomujem ich re\u00e1lne mo\u017enosti a situ\u00e1ciu, v akej sa sami nach\u00e1dzaj\u00fa. Probl\u00e9m je, \u017ee to, \u010do sa dnes u\u010d\u00ed na \u0161kol\u00e1ch u\u017e d\u00e1vno nekore\u0161ponduje s t\u00fdm, \u010do sa re\u00e1lne v gastre deje. A to mysl\u00edm obojstranne. Teda \u017ee nest\u00edhaj\u00fa pr\u00edstupu, ktor\u00e9 aplikuj\u00fa modern\u00e9 a kvalitn\u00e9 koncepty. A naopak, t\u00fdch 80% odborne nest\u00edha \u017eiakom. Nepochopili ich vlastn\u00fa \u00falohu a ani \u00falohu \u017eiaka, ktor\u00fd pr\u00edde na prax. V prvom rade sa \u017eiak pr\u00edde u\u010di\u0165. Nem\u00e1 ich kto u\u010di\u0165 naozaj \u00a0dobr\u00fa a poctiv\u00fa robotu, nemaj\u00fa vzor, ktor\u00fd by bol vhodne upraven\u00fd, oble\u010den\u00fd, ktor\u00fd by sa spr\u00e1val tak, \u017ee by bol uzn\u00e1vanou autoritou nie len pre nich, ale dokonca aj pre samotn\u00fdch host\u00ed, ktor\u00fdch obsluhuj\u00fa. \u00c1no, takto sme vn\u00edmali na\u0161e vzory, ktor\u00e9 chodili po raj\u00f3ne v \u010diernych oblekoch s mot\u00fdlikom.<br \/>\nDnes sa v t\u00fdchto prev\u00e1dzkach \u0161tudent nau\u010d\u00ed presne to, ako sa to robi\u0165 nem\u00e1, ale paradoxne je mu to d\u00e1van\u00e9 za pr\u00edklad, \u017ee takto je to dobre! Potom detsk\u00e1 prich\u00e1dzaj\u00fa do \u0161koly znechuten\u00e9 a konfrontuj\u00fa s u\u010dite\u013eom to, \u010do ich u\u010d\u00ed a \u010do sa deje v ich re\u00e1lnom gastre.<br \/>\nTak \u017ee cel\u00fd syst\u00e9m je \u00faplne, ale \u017ee \u00faplne zle, ako hovor\u00ed Karol. \u0160kolstvo je vn\u00edman\u00e9 ako biznis a vtom je ten najv\u00e4\u010d\u0161\u00ed probl\u00e9m. \u0160koly bojuj\u00fa za \u017eiaka, aby naplnili po\u010dty a t\u00fdm p\u00e1dom dostali od \u0161t\u00e1tu peniaze na svoju prev\u00e1dzku, zober\u00fa aj \u017eiaka, ktor\u00fd nie len \u017ee nem\u00e1 jasno \u010do bude v \u017eivote robi\u0165, nem\u00e1 o gastre ani najmen\u0161ie tu\u0161enie, ale sa navy\u0161e aj ve\u013emi zle u\u010d\u00ed, \u010do znamen\u00e1, \u017ee zle pristupuje k svojim povinnostiam. \u010co potom m\u00f4\u017ete od neho chcie\u0165, ke\u010f v\u00e1m povie, \u017ee on sem aj tak i\u0161iel nasilu a jeho to aj tak nezauj\u00edma? Mysl\u00edm si, \u017ee by si jeho rodi\u010dia a mnoh\u00ed \u010fal\u0161\u00ed 3x rozmysleli, \u010di daj\u00fa die\u0165a na hotelov\u00fa \u0161kolu, ak by po jej absolvovan\u00ed muselo e\u0161te 2 roky povinne pracova\u0165 v nejakej slovenskej gastro prev\u00e1dzke v obore ak\u00fd sa u\u010dil. Lebo \u00faprimne, mnoh\u00ed rodi\u010dia nechc\u00fa svoje deti vidie\u0165 ako \u010da\u0161n\u00edkov, kuch\u00e1rov, \u010di recep\u010dn\u00fdch. Ot\u00e1zka je, pre\u010do ich potom d\u00e1vaj\u00fa na hotelov\u00e9 \u0161koly, ak toto by mala by\u0165 nevyhnutn\u00e1 \u010das\u0165 etapy ich profesn\u00e9ho \u017eivota. Preto \u017ee bez toho, aby som nevedel naozaj profesion\u00e1lne zvl\u00e1dnu\u0165 v\u0161etky poz\u00edcie budem len slab\u00fd majite\u013e, \u010di mana\u017eer hotela, re\u0161taur\u00e1cie, \u010di baru. A \u010do je podstata \u0161koly? Vychova\u0165 naozaj profesion\u00e1lov.<br \/>\nAk sa vr\u00e1tim k myln\u00e9mu postaveniu \u0161tudentov na prev\u00e1dzkach, mnoh\u00ed podnikatelia to ber\u00fa ako konkuren\u010dn\u00fa v\u00fdhodu.
