A z ich poh\u013eadu je potrebn\u00e9, ak u\u017e pri\u0161iel do ich podniku, vytiahnu\u0165 tie penia\u017eky z jeho va\u010dku do ich kasi\u010dky. Na jednej strane si p\u00ed\u0161em, \u017ee pred\u00e1vam &#8220;italian coffee&#8221; a na druhej strane chcem by\u0165 otvoren\u00fd slovensk\u00e9mu z\u00e1kazn\u00edkovi, na ni\u010d sa nehra\u0165, da\u0165 mu to, \u010do chce v najvy\u0161\u0161ej mo\u017enej kvalite. Profesion\u00e1lna hrdos\u0165, moje vn\u00edmanie a chu\u0165 prezentova\u0165 to hos\u0165ovi bojuje s t\u00fdm, ako som za\u010dal vn\u00edma\u0165 ka\u017ed\u00e9ho hos\u0165a. M\u00e1m naozaj ve\u013ek\u00fa dilemu. Je lep\u0161ie by\u0165 profesion\u00e1lne by\u0165 re\u0161pektovan\u00fd, ale nepochopen\u00fd u t\u00fdch, ktor\u00ed s\u00fa najd\u00f4le\u017eitej\u0161\u00ed? Je lep\u0161ie si \u00eds\u0165 za svoj\u00edm vy\u0161\u0161\u00edm cie\u013eom a v niektor\u00fdch momentoch zabudn\u00fa\u0165 na to, \u017ee je to v prvom rade o hos\u0165ovi, v druhom o zar\u00e1ban\u00ed pe\u0148az\u00ed a a\u017e v tre\u0165om o uspokojen\u00ed ega? Nezobrali sme si n\u00e1hodou na svoje plecia \u00falohu &#8220;t\u00fdch najm\u00fadrej\u0161\u00edch&#8221;, ktor\u00ed vedia, \u010do je kvalita pod\u013ea uzn\u00e1van\u00fdch svetov\u00fdch barov a kaviarn\u00ed a zabudli sme na to, \u017ee le\u017eia tis\u00edce kilometrov od n\u00e1s a ich hostia poch\u00e1dzaj\u00fa z \u00faplne odli\u0161n\u00fdch kult\u00farnych pomerov? \u00c1no, chceme hos\u0165ovi da\u0165 vn\u00edmanie n\u00e1\u0161ho videnia gastron\u00f3mie a z\u00e1rove\u0148 sa hlasne \u010dudujeme, pre\u010do s\u00fa tie puby a piv\u00e1rne tak\u00e9 pln\u00e9&#8230; A smejeme sa z host\u00ed, ktor\u00ed si u n\u00e1s objednaj\u00fa &#8220;turka&#8221;&#8230;<br \/>\nPre\u010do berieme slovensk\u00e9mu z\u00e1kazn\u00edkovi jeho ve\u013ek\u00e9 presso? Nikdy ho v tomto nepresved\u010d\u00edme, ke\u010f ho chce ve\u013ek\u00e9, tak m\u00e1 n\u00e1rok vedie\u0165, ko\u013eko za to bude plati\u0165. Pred\u00e1vame slovensk\u00e9mu z\u00e1kazn\u00edkovi a vyjdime mu v \u00fastrety.<br \/>\nNikdy som sa netajil t\u00fdm, \u017ee ke\u010f som po\u010dul slovko &#8220;pikolo&#8221;, tak ma dv\u00edhalo zo stoli\u010dky a poriadne som to kritizoval. Dnes to nerie\u0161im. Ke\u010f to hovor\u00ed hos\u0165, m\u00e1 to ma\u0165. A ja, ak u\u017e si niekde mus\u00edm da\u0165 k\u00e1vu v nezn\u00e1mom prostred\u00ed a \u010da\u0161n\u00edk mi potvrd\u00ed objedn\u00e1vku t\u00fdmto &#8220;\u010darovn\u00fdm&#8221; slov\u00ed\u010dkom, tak ho u\u017e nepou\u010dujem a poviem, \u017ee tak do tri \u0161tvrtiny \u0161\u00e1lky. Nie je to dokonal\u00e9 espresso. Ale tak to m\u00e1m r\u00e1d. Ke\u010f budem hos\u0165a obsluhova\u0165, nikdy mi to slov\u00ed\u010dko nev\u00fdjde z \u00fast. Ak to chce tak vola\u0165 on, nech to vol\u00e1.<\/p>\n<p>Nechcem t\u00fdmito slovami poveda\u0165, \u017ee nem\u00e1m amb\u00edcie prin\u00e1\u0161a\u0165 hos\u0165om svetovo uznan\u00fa kvalitu, z\u00e1rove\u0148 nie\u010do nov\u00e9, nie\u010do zauj\u00edmav\u00e9, \u010d\u00edm bud\u00fa o\u010daren\u00ed. Ale prestal som sa zaobera\u0165 mali\u010dkos\u0165ami. A to, \u010di m\u00e1m v l\u00edstku nap\u00edsan\u00e9, \u017ee pred\u00e1vam &#8220;slovensk\u00e9 presso&#8221; mo\u017eno hos\u0165ovi ove\u013ea viac napovie, \u010do pije, ako ke\u010f mu to budem ja vysvet\u013eova\u0165.
